Lolita's Coastal Cocina, a Mexican restaurant at the Opal Sol resort on Clearwater Beach, is serving the public at 400 Coronado Drive.
The waterfront spot features shareable plates such as street tacos, charred octopus, customizable guacamole, nachos and entrees including Grouper a la Veracruzana and the Lolita's Carne Platter, Creative Loafing Tampa Bay reported. A tequila and mezcal cocktail menu anchors the drink side, alongside wines and beers. Hours run daily from 11 a.m. to midnight.
The restaurant is open to hotel guests and the general public.
The Clearwater Beach location is modeled after the original Lolita's at the Opal Key West Resort and Marina, according to the Business Observer. At the Key West outpost, Creative Loafing noted, the waterfront view is often blocked by a cruise ship. No such obstacle exists on Coronado Drive.
Lolita's is not the only new addition. Two other concepts opened at the street level of the Opal Sol along its Beach Walk promenade:
- Float Malt Shop & Creamery serves shakes, malts, ice cream scoops, floats and sundaes daily from 11 a.m. to 9 p.m. Signature items include the Tropical Explosion and Beach Brownie Mudslide.
- Beach Market opens daily at 6:30 a.m. and runs until 9 p.m., offering grab-and-go sandwiches, salads, specialty coffees and smoothies.
All three are open to the public.
The Opal Sol opened on Feb. 14, 2025, as a sister property to the adjacent Opal Sands. A glass-enclosed skyway connects the two buildings. Together they offer a combined 10 dining options, according to the Business Observer.
Opal Collection, which operates 31 hotels and resorts along the East Coast, manages both properties through Ocean Properties Hotels Resorts & Affiliates.
